Whiskey Sausage:

Ingredients:

1 jar of Sir Kensington Ketchup

½ C brown sugar

¼ C whiskey

½ tsp ground cinnamon

Directions:

1.)    Whisk together all ingredients in a medium saucepan over medium heat until all ingredients combined and heated through.

2.)    Serve with Apple & Maple Chicken Mini Links from Sausages by Amylu.

“A fun and festive way to serve these small bite appetizers at your Holiday parties or any occasion! Sweet, spicy, and full of warm delicous flavors!”

Kickin' Cranberry Chicken Meatball Stuffed Mushrooms with Goat Cheese

Yield: About 2 dozen

Ingredients:

1 pound button mushrooms (about 2 dozen), cleaned and stems removed

2 TBS olive oil

2 tsp. salt

1 tsp black pepper

10.5 oz Kickin Cranberry Chicken Meatballs by Amylu (About 12 meatballs, cut in half making 24 pieces)

1 bottle of store-bought raspberry-chipotle sauce

8 oz. fresh goat cheese

Chives for garnish

Directions:

  • Pre-heat oven to 350 degrees. Place mushrooms on a parchment lined sheet tray with hollowed side up.  Drizzle with olive oil, and season with salt and pepper.  Bake for 8-10 minutes or until browned.
  • In a medium saucepan over medium heat, combine the sliced meatballs and a bottle of raspberry chipotle sauce. Bring to a simmer until meatballs are warmed all the way through.
  • Place about 1 TBS of goat cheese in each mushroom cap, then top each cap with half a meatball.
  • Garnish each meatball with an inch long piece of chive.

Add a Gourmet Touch to Your Thanksgiving Stuffing

Ingredients:

½ loaf Tuscan bread, or your favorite loaf bread, large dice

2 TBS butter

2 TBS olive oil

1 medium white onion, small dice

1 carrot, medium dice

2 celery stalks, medium dice

1  peeled sweet potato, medium dice

1 C peeled celery root, medium dice

2 tsp salt

1 tsp black pepper

2 TBS white sugar

¼ C maple syrup

1 C Chicken Stock

1 TBS heavy cream

¾ C dried cherries

7 links Apple & Gouda Cheese Chicken Sausages, ½ inch dice

Directions:

  • Preheat oven to 350 degrees. Put bread cubes on a sheet tray and bake for 8-10 minutes until crispy. Remove from oven and transfer to a large bowl.
  • In a large non stick skillet, melt the olive oil and butter together. Add the onions, carrot, celery, sweet potato, and celery root, then season with salt, pepper, sugar, and maple syrup. Cook for 5-7 minutes over medium heat, stirring occasionally. Add the chicken stock, and continue to cook for another 1-2 minutes. Off the heat, add in the heavy cream and cherries and stir until everything is combined.
  • In another non stick skillet, spray with cooking spray, and cook sausage until heated through. Add vegetable mixture and sausage to the bread cubes. Mix until all combined.
  • Add mixture into a large baking dish, and bake uncovered for about 30-40 minutes until crispy on top, then serve!

Elegant Yet Simple Appetizer Idea for Your Thanksgiving Day Get-Together

Essential kitchen items:

  • Tall shot glasses, or something similar
  • Immersion blender or regular blender

 

Essential ingredients:

  • Sausages by Amylu: Harvest Apple Chicken Sausage, Apple & Maple Chicken Sausage, and Sugarhouse Maple Chicken Sausage



Carrot and Coconut Soup

Yield: About 8 Cups

Ingredients:

1 TBS butter

1 TBS olive oil

1 yellow onion, small dice

1 pound carrots, peeled, medium dice

1 C coconut milk

1 TBS curry powder

2 tsp salt

1 tsp black pepper

3 C chicken stock

1 C Apple & Maple Chicken Sausage by Amylu, heated and diced into small pieces

Directions:

1.)    In a large Dutch oven over medium heat, melt the butter and oil together. Add the onions and cook for 3-5 minutes. Then add the diced carrots, coconut milk, curry powder, 2 tsp salt, and 1 tsp black pepper.

2.)    Add the chicken stock, cover and let cook for 35-40 minutes until the vegetables have cooked through, stirring occasionally.

3.)    Turn off the heat, and puree soup with an immersion blender until completely smooth. If you need to add more liquid, add more chicken stock or water. Season again with salt and pepper to taste.

4.)    Pour soup into tall shot glasses and garnish each soup shooter with a teaspoon of heated and diced Apple Maple Chicken Sausage by Amylu.

5.)    Serve hot!



Celery Root and Pear Soup

Yield: About 8 Cups

Ingredients:

1 TBS butter

1 TBS olive oil

1 yellow onion, small dice

1 medium-large celery root, peeled and medium dice  (about 2 cups)

2 pears, peeled and medium dice

1 russet potato, peeled and medium dice

2 tsp kosher salt

1 tsp black pepper

4 C low sodium chicken stock

½ C heavy cream or whole milk

1 C Harvest Apple Chicken Sausage by Amylu, heated and diced into small pieces

Directions:

1.)    In a large Dutch oven over medium heat, melt the butter and oil together. Add the onions and cook for 3-5 minutes. Then add the diced celery root, pears, and potatoes.

2.)    Season with 2 tsp salt and 1 tsp black pepper. Continue cooking for 5 more minutes.

3.)    Add the chicken stock, and heavy cream or milk. Cover and let cook for 35-40 minutes until the fruit and vegetables have cooked through, stirring occasionally.

4.)    Turn off the heat, and puree soup with an immersion blender until completely smooth. If you need to add more liquid, add more chicken stock or water. Season again with salt and pepper to taste.

5.)    Pour soup into tall shot glasses and garnish each soup shooter with a teaspoon of heated and diced Harvest Apple Chicken Sausage by Amylu.

6.)    Serve hot!


Spinach and Potato Soup

Yield: About 10 Cups

Ingredients: 
1 TBS butter

1 TBS olive oil

1 yellow onion, small dice

5 russet potatoes, peeled and diced

10 oz. fresh baby spinach

1 TBS salt

1 tsp black pepper

6 C chicken stock

½ C grated parmesan cheese

1 C Sugarhouse Maple Chicken Sausage by Amylu, heated and diced into small pieces

Directions:

1.)    In a large Dutch oven over medium heat, melt the butter and oil together. Add the onions and cook for 3-5 minutes.  Then add the diced potatoes, and spinach, stirring often to wilt the spinach. Season with 1 TBS salt and 1 tsp black pepper.

2.)    Add the chicken stock, cover and let cook for 35-40 minutes until the vegetables have cooked through, stirring occasionally.

3.)    Turn off the heat, and puree soup with an immersion blender until completely smooth. If you need to add more liquid, add more chicken stock or water. Season again with salt and pepper to taste.

4.)    Pour soup into tall shot glasses and garnish each soup shooter with a teaspoon of heated and diced Sugarhouse Maple Chicken Sausage by Amylu, heated and diced

5.)    Serve hot!



Sugarhouse Maple Cornbread Recipe - A Twist To Your Favorite Comfort Food

Ingredients:

1 ½ C yellow cornmeal

1 ¼ C all purpose flour

1 TBS baking powder

½ C granulated sugar

1 tsp salt

1 C milk, cream or half and half

2 eggs

1 C frozen corn kernels

1 ½ C Sugarhouse Maple Chicken Sausage by Amylu, small dice

½ stick butter, melted

¼ C maple syrup

Directions:

1.)    Pre-heat oven to 350 degrees.

2.)    In a large mixing bowl, whisk together the cornmeal, flour, baking powder, sugar, and salt.

3.)    In another large mixing bowl, whisk together the milk, eggs, corn, diced sausage, melted butter and maple syrup.

4.)    Fold in the dry ingredients to the wet ingredients, do not over mix.

5.)    Pour mixture into a greased 9x9 inch baking dish. Bake for 45-55 minutes at 350 degrees until top is golden brown. Slice and serve into 9 or 16 square pieces.



New Recipe - Apple & Gouda Cheese Croissant Rolls

Try this recipe at your next tailgating party. It is sure to be a hit!

INGREDIENTS:

1 package of Apple & Gouda Cheese Chicken Sausage

1 package of ready to bake croissant dough

1 package of bacon


DIRECTIONS:

Roll out croissant dough in one piece. Separate into four sections length wise and create two triangles per section. Line the dough with strips of bacon and allow extra dough to be exposed on each side.Place one Apple & Gouda Cheese Chicken Sausage link at the opposite end of the exposed dough and roll. Take the exposed dough and pinch it into the roll to completely cover the sausage. Line a pan with aluminum foil and spray with cooking spray. Place the rolls seam side down and bake for about 20 minutes or until golden brown. Let cool for 3-5 minutes and slice to desired width with a serrated knife. Enjoy!



Northwestern University Football Alumni Feature

The football and tailgating season is finally upon us! As Northwestern University kicks off the season we thought it fitting to feature two of our very own Wildcat Football star alumni. Today we sat down with our head of Business Development, Darryl Zupancic. His hard work, dedication, and philosophy on team based collaboration have certainly carried over from the field to the office and we are lucky to have him!

What’s your favorite memory while playing NU Football?  There are so many great memories, it is impossible to pick just one or even a few.

What NU game are you looking forward to most this season?  Vanderbilt this Saturday at 7:00 p.m., night games are great!

ATK Foods at Northwestern Football's 'Lift for Life' Charity Event

This past Friday, ATK Foods donated over 60 pounds of sausage links to Northwestern University’s 2nd annual “Lift for Life” event. Athletes from the Northwestern football team competed in various speed, agility and strength events in order to benefit the Ara Parseghian Medical Research Foundation. The Foundation which was created in 1994 is in honor of former head football coach Ara Parseghian who has a rare genetic, neurodegenerative disorder called Niemann-Pick Disease Type-C.  The Northwestern chapter of Uplifting Athletes, whose purpose is to generate awareness and funds to help cure rare diseases considered this event near and dear to the Northwestern community and has been tremendously dedicated to helping this cause.

The event was free (although donations were encouraged) to spectators who wanted to see their favorite Wildcat team members work hard for a cause as well as a casual meet and greet after the event. Athletes, coaches and spectators alike chowed down on some of ATK’s delicious links while the donations just kept rolling in, totaling at $8,168. Honoring Dad this Father's Day with a Little History and Sausage!

Did you know that Senora Smart Dodd was the person behind the first Father’s Day back in 1910? When Dodd was 16 she lost her mother and the responsibility of raising the children fell to her father William Jackson Smart. Sometime later, she heard a sermon at church about Mother’s Day and thought that “There needs to be a day for fathers too”.  Dodd proposed the idea of a day to honor fathers to her local church alliance in Spokane and thus the first Father’s Day was born!

Over the years the idea of Father’s Day spread and people lobbied congress to establish the holiday. President Calvin Coolidge approved Father’s Day as a national holiday in 1924 in hopes that families would "establish more intimate relations between fathers and their children and to impress upon fathers the full measure of their obligations".

Today, we continue the tradition by showering our fathers with hugs, kisses, and gifts. If you’re struggling to find the perfect gift for dad or planning a father’s day cook out, what better way to show him you care by giving him the gift of sausage!
